1 ടീസ്പൂൺ തക്കാളി പേസ്റ്റ്
1 ടീസ്പൂൺ മുളകുപൊടി
1/3 ടീസ്പൂൺ അറബിക് മസാല
ഉപ്പ് പാകത്തിന്
വെള്ളം
600 ഗ്രാം സെല്ല റൈസ് (കുറഞ്ഞത് 30 മിനിറ്റെങ്കിലും കുതിർത്തത്)
വെള്ളം (അരി പാകം ചെയ്യാൻ പാകത്തിന്)
നിർദ്ദേശങ്ങൾ:
ഒരു പാത്രത്തിൽ എണ്ണ ചൂടാക്കുക. മുഴുവൻ സുഗന്ധവ്യഞ്ജനങ്ങളും (ഏലക്ക, ഗ്രാമ്പൂ, കറുവപ്പട്ട, ബേ ഇലകൾ, കുരുമുളക്) ചേർത്ത് ഒരു മിനിറ്റ് നേരം പച്ച മനം മാറുന്നത് വരെ വഴറ്റുക
അരിഞ്ഞ ഉള്ളി ചേർത്ത് ഗോൾഡൻ കളർ ആകുന്നതു വരെ വേവിക്കുക. ഇഞ്ചി-വെളുത്തുള്ളി പേസ്റ്റ് ചേർത്ത് ഒരു മിനിറ്റ് വഴറ്റുക.
അരിഞ്ഞ തക്കാളി, പച്ചമുളക് (ഉപയോഗിക്കുകയാണെങ്കിൽ), ഉണങ്ങിയ നാരങ്ങ (ഉപയോഗിക്കുകയാണെങ്കിൽ) എന്നിവ കൂട്ടിച്ചേർക്കുക. തക്കാളി വേവുന്നത്‌ വരെ ഇളക്കുക.
തക്കാളി പ്യൂരി, മുളകുപൊടി, അറബിക് മസാല, ഉപ്പ് എന്നിവ ചേർത്ത് ഇളക്കുക.
ചിക്കൻ കഷണങ്ങൾ ചേർത്ത് മസാല മിശ്രിതം ഉപയോഗിച്ച് നന്നായി യോജിപ്പിക്കുക. ഇളം ബ്രൗൺ നിറമാകുന്നതുവരെ കുറച്ച് മിനിറ്റ് വഴറ്റുക. ചിക്കൻ മുങ്ങാൻ പാകത്തിനുള്ള വെള്ളം ഒഴിച്ച് 20-25 മിനുട്ട് വേവിക്കുക, അല്ലെങ്കിൽ ചിക്കൻ പാകം ചെയ്യുന്നത് വരെ.
ചിക്കൻ പാകം ആയാൽ, കുതിർത്ത സെല്ല അരി ചേർക്കുക. ഉപ്പ് ചേർക്കുക.
പാൻ നന്നായി മൂടി 15-20 മിനിറ്റ് കുറഞ്ഞ തീയിൽ അരി വേവിക്കുക. ബസുമതി അരിയെ അപേക്ഷിച്ച് സെല്ല അരിക്ക് കുറച്ച് പാചക സമയം ആവശ്യമായി വന്നേക്കാം, അതിനാൽ അത് ശ്രദ്ധിക്കുക.
സ്റ്റോവ് ഓഫ് ചെയ്ത പാത്രം ചൂടിൽ നിന്ന് മാറ്റി 10 മിനിറ്റ് വെയിറ്റ് ചെയ്യുക.
റൈത, സാലഡ് എന്നിവയ്‌ക്കൊപ്പം ചിക്കൻ മധൂദ് വിളമ്പുക.
