കറുത്ത കുരുമുളക് – 1 ടേബിൾസ്പൂൺ
പെരുംജീരകം – 1/2 ടേബിൾസ്പൂൺ

ഇവ ചതച്ച് പൊടിയാക്കി മാറ്റി വയ്ക്കുക.

ചെമ്മീൻ (ചെമ്മീൻ) – 500 ഗ്രാം
ഉപ്പ് – 1 ടീസ്പൂൺ
മഞ്ഞൾ പൊടി – 1/2 ടീസ്പൂൺ
മുളകുപൊടി – 1 ടീസ്പൂൺ
കുരുമുളക് പെരുംജീരകം പൊടി – 3/4 ടേബിൾസ്പൂൺ
വെളിച്ചെണ്ണ – 3 ടേബിൾസ്പൂൺ

ചെമ്മീൻ മാരിനേറ്റ് ചെയ്ത് വെളിച്ചെണ്ണയിൽ വറുത്തെടുക്കുക. ചെമ്മീൻ വേഗത്തിൽ പാകമാകുന്നതിനാൽ വലിപ്പം അനുസരിച്ച്, ഇതിന് പരമാവധി 2 മുതൽ 3 മിനിറ്റ് വരെ എടുത്തേക്കാം. സുഗന്ധങ്ങളാൽ നിറഞ്ഞിരിക്കുന്നതിനാൽ കൂടുതൽ തയ്യാറെടുപ്പിനായി അതേ എണ്ണ ഉപയോഗിക്കുക.

ചെറിയ ഉള്ളി – 10 (അരിഞ്ഞത്)
ഇഞ്ചി ചതച്ചത് – 1 ഇഞ്ച് കഷണം
വെളുത്തുള്ളി ചതച്ചത് – 6 അല്ലി
പച്ചമുളക് – 4 മുതൽ 5 വരെ
തേങ്ങ അരിഞ്ഞത് – 1/4 കപ്പ്
കാശ്മീരി മുളകുപൊടി – 1 ടേബിൾസ്പൂൺ
മല്ലിപ്പൊടി – 1/2 ടേബിൾസ്പൂൺ
ഉപ്പ് – 4/3 ടീസ്പൂൺ
കറിവേപ്പില – 1 തണ്ട്
തക്കാളി – 2 വലുത്
വെള്ളം – 1 കപ്പ്

അതേ എണ്ണയിൽ ചെറിയ ഉള്ളി സ്വർണ്ണനിറം വരെ വഴറ്റുക. ശേഷം ഇഞ്ചി, വെളുത്തുള്ളി, പച്ചമുളക്, തേങ്ങാ കഷ്ണങ്ങൾ, കറിവേപ്പില എന്നിവ ചേർത്ത് ഒരു മിനിറ്റ് കൂടി വഴറ്റുക. ഇപ്പോൾ തീ കുറയ്ക്കുക, തുടർന്ന് മുളകും മല്ലിപ്പൊടിയും ചേർക്കുക, മറ്റൊരു 30 സെക്കൻഡ് വറുത്ത് തുടരുക, കൂടാതെ ചെറുതായി അരിഞ്ഞ തക്കാളി ചേർക്കുക. അവ മൃദുവായതിനു ശേഷം വെള്ളം ചേർത്ത് 5 മിനിറ്റ് വേവിക്കുക. ഈ ഘട്ടത്തിൽ, നമുക്ക് വറുത്ത ചെമ്മീൻ ചേർത്ത് നല്ല മിക്സ് നൽകാം, കുറച്ച് കുരുമുളക് പെരുംജീരകം പൊടിച്ച് വിതറി ആസ്വദിക്കാം
